  • Never made meatballs? The mind boggles.

    I don't use recipes. Mix your wet ingredients: ground meat, eggs (one per pound of meat), chopped fresh onions (don't cheat on this one, onion powder does NOT give the same results) and whatever sauce you want to throw in for flavour. That last bit is a little dicier with primal, admittedly. I usually clear out the little bits of whatever bottles are in the fridge. A little tomato sauce would probably work well here to eliminate cheating. This time I added bacon fat too, because the meat was lean, and I was baking them on a rack in the oven, and I didn't want them to be dry. And then I mix the dry ingredients in a small bowl: formerly bread crumbs, now almond meal, with salt, pepper, and whatever spices I feel like. Garlic powder, oregano, basil, whatever. It changes a lot depending on what kind of effect I'm looking for. 1/2 hour in the oven at about 400. They can be pan-fried, in which case I don't add any fat to the mix. It's faster, but more work.

    I've done this with ground poultry too, and tried for a more Oriental feel. So that means coconut oil, ginger, cilantro, a bit of hot pepper perhaps... No tomato.

    • just read through Paleobirds thread on eating more fat. I think the title is EAT MOAR FAT - I finally get it! or something very close to that......... makes good sense. She's a wealth of info!

      Thanks for the pat's on my back! I'm feeling good again about this whole process. I only work pt also --- VERY pt. I'm lucky if I get in 10 hours a week. I'd like to be getting at least 15 and am going to ask my boss if he can throw a little more work my way. I am basically his assistant, and I'm sure there are other jobs he could pass over to my desk to ease his load a bit.

      and on that subject......... I should heading out the door and I haven't even showered....... boss is on vacation this week, and since my hours are totally flexible - I'm being a bit lazy today. Better go get ready........

          I know - crazy huh? I think I've always assumed meatloaf and meatballs have pretty much the same ingredients - so why bother making a gazillion small meatballs when you can make one giant meatloaf! But -- they can and probably are supposed to be different.

          So here's my concoction: 2 lbs gr. beef - 2 lbs. ground pork - 1 onion finely chopped - 1/2 each green and red peppers finely chopped - 2 cups Italian blend grated cheese - 2 TB minced garlic - 4 eggs - 1 1/4 cup beef broth - 2 cups Almond meal/flour - a sprinkling of dried cilantro, italian seasoning, salt and pepper, 1 TB mustard. I'm topping them with a mixture of tomato paste, bbq sauce and water (for dilution) then sprinkling with the rest of the grated cheese and slices of onion and peppers.

          what do you think???

          oh - and I certainly hope things are the upswing - and the trend continues!

            Poor guy has a sensitive stomach --- pills don't stay down. We've tried glucosamine and a prescription for Reglan. Upchucks both of them. We just try to keep him comfortable - and love him lots and lots! I think he's still hurting cuz he's been pretty quiet today. I feel so bad for taking him on that long of a walk

            • Poor doggie.

              You put broth in your meatballs? I can see your reasoning about meatloaf. Somehow meatballs are more fun though. I make them big, mind you. I use a 1/3 cup measuring cup to shape them. But I do like meatloaf too, at least home-made. Last time I had meatloaf at a restaurant was at Cracker Barrel. Let's just say I wasn't impressed.

              • I thought the broth thing was weird - but I saw it in a recipe on Allrecipes - they said it was necessary for moisture. They came out really good - I made them pretty big too - I'd guess 1/2 cup plus??? they filled my palms as I was making them into balls. I will definitely remember this meal and do it again.

                • Have you talked to his vet about cortisone shots? If they work on people, why wouldn't they work on a dog?? Our dog, the one who had a hip injury as a pup, has pretty moderate arthritis. It shows when he's been active and he's a very active dog (will fetch for hours and hours and hours - I swear, he'd fetch til his heart exploded if we could keep up with him). We give him chewable baby aspirin per the vet's orders. He's an 85 lb dog, so 2 tablets. A bassett might not need more than 1 tablet. Sometimes we put them on peanut butter bread, but he's pretty good about chewing them up without the bread too.

                  Our brown dog, the non-arthritic one, has allergies. He gets very itchy and scratches himself silly sometimes. He used to have to take a daily benedryl... those DID have to be put on food b/c he'd try to chew them and get no where with it. He couldn't figure out he needed to just swallow it whole. And "they" say dogs are smart... lol

                  When I make meatballs, it's simply my meatloaf recipe, formed into balls, baked and covered with ketchup as the diner desires. I use one handful of baby carrots chopped finely, 2 stalks celery chopped finely, 1/2 - 1 onion chopped finely, 1 garlic clove chopped finely - saute veggies in bacon grease. Add veggies and grease to 1 lb deer burger, 1 lb ground pork, 2 eggs, various seasonings. Sometimes I add lightly cooked bacon bits for added texture/flavor. This makes 12 balls. Bake on cookie sheet at 400 degrees for about 30-45 minutes depending on doneness. Add ketchup as you see fit. They're very moist b/c of the veggies, require no breading or anything similar for binding/filling, and are 100% primal b/c the recipe came from here.

                  • that sounds good too! I don't think I've ever had ground venison. I love that you can put things together thousands of different ways and it can still turn out great!

                    Still hanging at 187. I thought for sure today would be a drop cuz I swear I was peeing ALL night! I think I got up to use the bathroom 4 times! But - nope -- same old stupid number on the scale! GRRRR! and I did everything right yesterday -- go figure. Maybe tomorrow?

                    Work will be short today. Last work day of the month and I made it all month without calling in sick! Yeah for me!

                    There's was some discussion on the EAT MOAR FAT thread about calculating desired weight. Its so confusing! The only reason I'm interested in that is because there is a theory that your protein intake in grams should equal your desired weight in kilo's. For me thats 60. Thats not a lot of protein --- but "they" say during the weight loss phase if you overdo the protein it will be stored rather than burned - especially in the presence of carbs since they will be burned first. So if I understand it correctly - and remember my A&P well enough......... the body uses carbs first, then proteins, then fats. Since fats are the hardest to break down and metabolize. And the best fats to eat are the MCT (coconut oil). I hate the flavor it puts into my food. Can I put it into cellulose capsules and swallow it? HA! just kidding.......... sorta. If anyone knows of other MCT please let me know. Or - I'll just search through the site and I'm sure I will find the answer someplace. I'm not sure I want to get that picky with what I'm eating.

                    I think I'm on the right track and I'm going to just stay the course for now. I'll keep my total calories around 1200 and my macros at 10-20-70. Thats what Dr. Attia at the Eating Academy says to do. And Mark seems to agree with his theories. So......... the experiment continues.

                    I'm upping my walk to 1.5 miles today. The daily walking has to help also. I'm going to try NOT to weigh again until Wednesday. I'm not sure why I started with Wed. as my weigh in day -- but it is. That will give me 6 days to loss weight before I step on the darn thing again. I go in for a blood draw on Tuesday -- I hope they don't want my weight.

                    • Yes, the daily walking will help a lot. Even before going primal, I could see the difference it made.

                      I find weight loss or gain sometimes shows up on the scale two days later instead of the next morning. Not sure why, but it doesn't really matter. You've got something that works now, don't overthink it. Just keep plugging away. This stuff never moves in a straight line.

                      • Even if they want a weight, you can look away or stand on the scale backwards so that you don't see it - and instruct the nurse not to mention it...

                        I was looking at Dr. Attia's site and can't find where he talks about macros... can you point me in that direction please?

                        • Tomi, can you find deodorised coconut oil? It's all the good stuff but without the coconut taste! I use that for cooking and baking.

His site is huge and takes a lot of browsing! But its all good info........ just time consuming. I'm impressed that he is a medical doctor and is willing to say that most of what he was taught in med school about nutrition is totally wrong.

                              never heard of it! I'll see if I can find it - but I still have 1/2 gallon of CO sitting on my counter. Mostly I use it to soften my FEET! HAHAHA!!! Maybe my sister would want it - she bought some from my a while back. Thanks for the suggestion!

                              • I agree with Candy. Refined coconut oil does not have the coconut taste or smell. I use it as a moisturizer and to make my kids' food as they're sensitive to the taste of coconut. Personally, I don't like it for cooking b/c it's missing that added layer of flavor I've come to expect with coconut oil (namely on potatoes - but it's great for meat b/c it doesn't have taste). And it can be cooked at a higher temp than regular, unrefined coconut oil. (And it's cheaper)
