  • Okay, so I volunteered to cook up some fajita meat along with bell peppers and onions for tonight's End of School Fiesta. I found this link on the recipe section and thought I'd share it. I added 1 tsp each of garlic and onion powder and some olive oil. I don't know how much oil I used cause I didn't measure that out The recipe tasted good before I threw in the meat, so I recommend it.
    Grok On Rock: Fajita Marinade

Oh yeah, roasted the cumin seeds then ground them up in my coffee grinder. I used my small non-stick skillet for this. Turned up the heat to about medium and poured some cumin seeds in, just enough to do one layer. Then you let them heat up until you get the aroma of the seeds cooking. A few might pop or flip. They're done at that point. Grind in the coffee grinder. Be careful not to stand too close if you aren't used to the aroma, it's a bit strong, but worth it!

I learned that little trick from Cooking Light magazine. They usually have some good recipes that can be altered to meet our needs. I need to go through some of them and use some of those recipes again. I might just post links and then give some ideas.

    • Judg, I am a little bit harder on myself than I need to be at times. I've let go of the ice cream thing today. I almost bought some dark chocolate today, but I decided against it. Mom is making some gluten-free red velvet brownies for tonight's party. I'm going to try to eat as much protein and fat as my belly will handle and see if I can maybe have a few bites.

      • We all tend to be harder on ourselves than we need to be.

Okay, I love cumin and I love coffee. But aren't you afraid your coffee will taste like cumin for a while? Those are not two flavours that I care to blend.

        • I don't drink coffee Problem solved. However, I am one of those weird people who might not be bothered by the mixed flavor. I'm sure a little cinnamon would cure that taste

          • Good morning! Up early in an attempt to make it to church early enough to help out with today's free food thing at the Youth Cafe. This should be fun. I'm thinking a little barefoot walking and some sprint runs might be in order for the morning.

I made it last night and only had one brownie. I filled myself up to the point where I just had enough room for one. Don't get me wrong, they were absolutely delicious and mom is getting better at the gluten free recipes.

I had a good time swimming, even if the pool was a little crowded. I managed to find a way to work around all that and get some laps in. I even managed a PEM before picking up my kid

            Yesterday
            B: 2 fried eggs (I'm out of bacon )
S/L: Microwave roasted cashews and almonds in butter
            S: Scoop of mascarpone cheese
D: Taco meat, sour cream, guacamole, fajita meat (the marinade is freaking AWESOME), green and red bell peppers, and onions
Dessert: 1 of mom's delicious red velvet brownies!
            Drinks: Water

            Exercise: Swimming, total 30 minutes.

Yeap, I actually managed to drop weight, so I'll be updating my signature. Yay!

            • Busted at Frazzleberry's! Ah man. I did top the small amount with lots of berries.

Ok, so I have a bit of a sticker fettish at times when it comes to my truck. Only recently did I remove a few because they were essentially dead. However, I did come across this site Paleo Bumper Sticker | Paleo Stickers | Paleo Decals - CafePress Oh snap son! Like I need another sticker, but I think I might just purchase one. Only I'm going to try to get one that isn't obnoxious.

                • Hello spambot!

Busy day today with lots of fun. First thing, I went barefooting this morning for about a mile. I didn't get all crazy with the free food thing at church this morning. Gabi actually sat through the regular service with my small group and managed to behave and not talk. Of course, she was sitting by her favorite person in my group, so that might have helped a little bit.

Yes, pool time happened today I'm getting better at maneuvering around the kids while trying to get some laps in.

My book club had their monthly meeting at Frazzleberry's. This location had a gluten-free, no fat (I'm not too worried about that part), no sugar added (I know they're using something in that one). I took a little bit then smothered it with berries. Towards the end, the berries tasted like berries and cream. Still bad, but I didn't go over board with it.

For Sunday night DiTommaso dinner, mom cooked up some chicken, old school style. Yeap, skin and all. I was in a little slice of heaven at this point. She also sauteed up some shallots and mushrooms in butter. YUM! I did have some mashed taters, but only a little bit. The chicken tasted almost just how she used to cook it when we were kids. I used to love eating the skin on the chicken when I was younger. I have vowed to go back to that because it's good for me. No more skinless chicken breasts! Oh, I did have what amounted to one gluten free shortbread cookie that mom's been making. I'm not gonna beat myself up over that because she makes those with an extremely small amount of sugar in them.

                  Today
B: 2 fried eggs (yes, I did finally go get more bacon)
L: Microwave roasted, in butter, cashews and almonds. Leftover beef fajita mix
S: Sour Cream, like about 4 tbsps. I did that because I almost ate one of Gabi's snacks that we bought at the store. Then I remembered I had a spoon in my trucks cup holder and ate some of the sour cream that I had bought
D: Mom's cooking! Baked chicken leg and breast, skin on and bone in, sauteed mushrooms and shallots, and some mashed taters
Desserts: Frazzleberry's GF, LF, NSA, vanilla smothered with berries. One small shortbread cookie
                  Drinks: Water

Exercise: 1 mile barefoot walk. Total, 30 minutes swimming.

                    • I always loved the chicken skin too. It is something I have refused to give up. I do buy the skin-free breasts, but when there is skin on my chicken, I keep it. And eat it. Even when I was going relatively low-fat, I still ate them. It was my guilty indulgence. Now it's my virtuous one. LOL!

Sounds like you did really well. So funny, eating sour cream by the spoonful to avoid sugar cheating. How our worlds have changed!

                      • Yeah, they haven changed. Although I shouldn't be so heavy on the dairy, it's good stuff when you find the right brand. Yum! I did some shopping around for fried pork skins at another grocery store before heading home. I think I've found a brand I like, but I'm going to check out Natural Grocers and see if they have anything as well. We have a local chain who has three different versions of their store and one is more on the Mexican side. I figured they would have more options and I was right! How do I know I like this one? One, it only had fried pork skin and salt listed and Two, I ate almost the whole bag! They also have a better selection of organ meats.

                        • Oh! I ate the whole bag, lol. Dang those things were GOOD! I've got another bag with some pretty big pork skins in them.

Soooooo bored today at work. I don't mind change, but I'm not exactly a huge fan of it when it slows me down. Being behind and it being hot outside today made me a sleepy worker. I almost wanted to hide somewhere and take a nap. As much as I wanted to jump in the pool today and swim, my body wasn't having any of that. The spirit is willing, the flesh is weak. So true with me today.

Ok, I'm a little hard headed when it comes to any kind of sports/workout related injury or what not. I don't stop and rest, I just keep pushing through. Did that this morning during sprints and for the second time ever in my life, my left quad started to hurt. My pride made me do all six sprints because I couldn't except backing down. My body said, "Hey, thanks alot ya dang mutapunk degenerate, that hurts!" By the end of the workday, it didn't hurt as much. I'm sure this is why my body wasn't having any of the swimming thing. So, I went for a walk, barefoot and all, instead. Still a little bit of pain, but it's bearable at this point. Tomorrow is PEM day, so I'll give my legs a break in the morning. Sort of.

                          Today
                          B: 4 pcs bacon, 2 fried eggs
S: Microwave roasted macadamia's in butter and one small avocado
L: Leftover fajita meat and veggies, salad with homemade dressing
S: 1 whole bag of fried pork skin and a few tablespoons of sour cream (the stuff I have is good, but I need to lay off a little)
D: Oh yeah! I crinkle cut the zucchini tonight. AHA! My food slicer didn't get the better of me either! Put those in the oven and roasted them. Cooked up some pork and bacon sausage in the cast iron. Threw in the sliced onions first and sauteed in butter, then added the cut up sausage. Tossed in the last bit of my Sherry and about a cup of water and let that reduce down. SO GOOD!
Drinks: Water and Peppermint tea sweetened with honey

                          Exercise
6x50 sprints with push ups at one end and spiderman's at the other. 30 total of those two.
Walked barefoot for about 1.25 miles.

I'm worn out tonight. So ready for bed. G'night all!

                              • *sigh* My kid, I love her dearly, but she did something really stupid and lied to me about it. I didn't yell at her, but she's in a lot of trouble. No electronics, cause that's what gets her the most. She's grounded and all sorts of other stuff. Luckily for her, by the time I found out what had happened and took her upstairs to our apartment, I was soaking wet from the pool and had to change. That gave me time to take a breather and calm down. I'm just disappointed right now. Work's been driving me crazy because all these changes we're going through. I just have to remember that God never puts me through anything I can't handle with His help. Phew! This disappointment thing is for the birds!

Got up and did PEM this morning. Work was crazy stupid today, but it's getting better. I missed group tonight because I really needed to have a talk with Gabi about her bad decision. Not the best day today.
