    • OMGOSH! So worn out from today! I'll have plenty of pictures to post once I get them all uploaded. To be honest, I'm not exactly sure of everything I ate today, but I'll do my best. I know I woke up hungry, but that's because I had a small piece of brisket from a brisket burrito (terds cheated me out of the rest of my meat!), then decided to cook up like 4 slices of bacon when I got home from dancing last night.

      I completely killed any idea of trying to get a full eight hours of sleep before going to church this morning. Of course, that meant I was late picking Gabi up from Mom's place and getting to church. Ugh. I needed this morning's sermon and it hit me in the gut. Good stuff, true story.

      One of the guys from my Sunday morning group suggested that a whole bunch of us get together and go to Palo Duro Canyon (PDC) to hike and hang out. I LOVE this place! It was great to get out and be in a place that's become like a mini spiritual retreat for me. I don't have the ocean anymore, so this has to do. Did I mention I love this place?!

      We took on the Givens Spicer Lowry trail and went out probably about 1.2 miles, so total hike was 2.4. Then we hit up the waterways! Fun stuff every time. We got to waterway 6 and almost didn't get in because of the stench from the standing water. Thankfully, some of our crew noticed that a little further down we had running water. Oh, this is where our, I mean my, day turned a little fun. So, we had some river rocks and I wanted to get my grokette on! Yeap, I threw a few of them. It was awesome, but also funny. I picked up the first one and threw it overhead. Then I realized some of the mud slide down my back and into the back of my shorts! Awkward, yet funny!

      My mom, she's awesome. I told her we would show up to Sunday night DiTommaso dinner a bit hungry. She cooked up some seriously great food. Meatloaf stuffed with veggies and bacon! Zucchini, green onions, and yellow squash on the side. I did nosh on some quinoa pasta covered with pesto sauce. SO HUNGRY! We had some snacks on the trail with us, but we had so much fun playing today!

      B:4 slices bacon, sauteed spinach and goat cheese
      L: Smoked turkey, guac, tomato
      S:New Earth Chocolate Goddess Cluster (oh, you have NO idea how good these are!) about 3 of those. 1 serving of New Earth Walnut Inspiration, and about a serving of a Cashew, Almond, and Pistachio mix.
      D: Mom's awesome cooking
      S: 4 squares Lindt 85%
      Drinks: Water and some of mom's peppermint iced tea sweetened with Agave nectar.

      I see that I lacked on my veggies today and might have overloaded on tree nuts. Well, they did fuel the fun today! Thankfully, there was no shortage of bacon. Phew!

          • Yum, I must meet your Mama. I too had an Italian family feast today, but there wasn't a heck of a lot that was grain-free: the zucchini and chicken scallops were breaded, flour or bread crumbs in the meatballs, and the pasta was definitely wheat. Fortunately people left me the lamb (just worked out that way) and I filled up on roasted red peppers, salad and sweet potatoes.

            The sermon hit the mark with me today too. Good stuff to ponder.

                  • It was the BEST way to spend a Sunday afternoon, given the area we live in. My friend David swears my kid could be his as goofy as she is. I'd almost agree with it. She still loves playing in the mud, lol.

                          • Today was sort of easy going at work, which was nice. I didn't want to get up this morning! I was doing pretty good today then my daughter informed me they weren't allowed to bring fresh fruit or veggies to snack on tomorrow while taking the STAARS test. Yeah, I ranted on my FB page about it because I think it's ridiculous. I was actually hoping one my local teacher friends would correct the statement. What I got was that they don't want that stuff because it can be too noisy. The kids are allowed cracker like snacks and beef jerky. I can be okay with the jerky, but Chex Mix, Goldfish, and other snacks can be just as noisy with the wrong kid. I compromised and let her have some Goldfish, but I've packaged them for her along with some trail mix. It's not the trail mix I would have chosen, but I've got to make sure she eats if she gets hungry (which is almost all the time) but doesn't get tired in the middle of the test. I'm just not a fan of the school systems idea of good nutrition. Please do not mistake this, as I think one of my friends did, to think that I don't like teachers.

                            I was so happy to get home and bust out my little tabletop gas grill today! So, I decided to roast some veggies up while I was letting it warm up a little. Yea, I know it doesn't take much time. Now I have some roasted veggies for breakfast! And roasted garlic

                            B: 2 slices bacon, sauteed spinach and goat cheese
                            S: Mix of berries, 2 pieces 85% Lindt
                            L: Leftover of mom's meatloaf and some veggies. Salad with homemade dressing.
                            S: Last of those little brownie things from New Earth and the last of the other snack mix.
                            Dinner: Buffalo cheesy burgers, steamed squash, and roasted red and green pepper slice.
                            S: Maybe slid in some more of that awesome aged cheddar. Ohhhhhhhhh, that stuff is goooooooooooooood.

                            Drinks: Water and Coconut Milk

                            10 Minute trainer abs and a little walk around the apartments when we got home earlier.

                            • I wonder if dried fruit would be acceptable. It is after all just "fruit jerky" is it not?

                              Speaking of skewed nutrition (you mentioned the school's opinion of nutrition isn't right) did you hear that it is now being considered illegal to blog about paleo in North Carolina? Yay for freedom of speach! *shakes head in a decidedly "no" nod*
