    I did! I snuck a taste and just had to post. There's no coconut flavor once it's finished, but the roast is the most tender and juicy I've ever made. I think next time I might add some carrots or squash too.

        Did the coconut milk give it any kind of coconut taste? I'm not a fan of coconut milk so I was curious about that.

          Nope! I really thought it would, but no flavor whatsoever in the end. The leftover juices weren't creamy either, so I think it simply just helped the roast become more moist and tender than it usually would.

            Not too bad! I was expecting to be more bloated after weekend of eating crap, but it hasn't had as much of an effect as I had thought. I really did notice a different though in stomach bloat after eating grains, so that to me is a sign that I do have issues with gluten. I'm definitely doing the right thing by avoiding it. I managed to do a TON of cooking this weekend for the week, so I have some delicious meals ready for lunches and dinners.

            Lunch today is pot roast with a bit of smashed potato, sauteed zucchini, a spinach salad with blood orange infused olive oil and balsamic vinegar dressing, and some cooked apples with cinnamon for dessert.

              Trying to decide about dinner. I could go home and do some sort of egg scramble, maybe some steak. Or I could get some takeaway that I've been craving for a good three weeks. It's tamarind coconut curried pork and spinach, so nothing too terribly bad by primal standards, from what I can tell. Decisions, decisions!
