      • I would have been afraid of teenage boys till I had one of my own. Between him and his crew, the 6 of them have been together since 5th grade, I tell you they will give you hope for the future!

        • Back from Texas. My body has no clue what state or time zone it is in NY, NM, TX, NM...all in 4 days. Good to be home. Back to TX Tuesday through Friday of next week.

          More paperwork for the adoption. We have to sign paperwork for the TX background check. Not sure why they can't have one signature for everything (like previous background checks I've had), but, guess I gotta go with the flow.

          Even though I was "just" on vacation, I'm very glad it's a 3 day weekend. I need to catch up on my chores and make some more freezer meals so that DH and mom have food while I'm traveling. Those are a life saver for us all!

          Diet............. Now that I'm done vacationing, I think I'm going to give 5:2 a try. I like the flexibility and think it could work really well with my travels. I figure I can have 500 calories on my 2 down days and 1450 on my "up" days. That also gives me flexibility to go go high some days and moderate down others, which is particularly helpful with business travel!!!

          • Hard to beat the flexibility of the 5:2.

            • No problem with relaxing. I'm actually a lazy slug. I have to remember to get some work done

              Nothing exciting to report for today....... So glad for a long weekend. Anyone want to go to TX for me next week?

                • Sleeping, laundry, freezer meals. Naps. We are having a friend over for dinner on Monday. He is a vegetarian. I will be making Nepali/Indian food.

                          • I tried that pumpkin protein bread I pinned awhile ago. That was a FAIL. It was like a soufle, not bread. Blech.

                            Right now, I'm working on a molten lava cake in the crockpot. I made it with almond flour (that's what I had). I need to grind up my sunflower seeds and see if I can get flour (I know you can do it in my vitamix, but I'm not all that good with it yet!). The batter was good. I did part stevia part coconut sugar. I probably need to do a 21 day sugar detox because my I added more sugar than I typically like

                            I am going to make "burfi". It is an Indian sweet. Often made with chickpea flour. I'm going to try it with coconut flour, pecans (we'll see if this is a match with cardamon...), and coconut milk condensed milk (I made that this morning). If it's good, then this is what I will have for my guest on Monday. Coconut flour is tough to work with!

                            • I am right now at the point where if I am going to do a treat I just do it and take the sugar/grain hit. It is rare enough. And for me coconut flour or almond flour doesn't seem any more primal that any thing else. Not an every day thing or even weekly but just a rare treat. And then I just get on with life.

                                This is kind of where I am at. However, I have coconut flour to use up. So, I will work on using it up and then thats it.

                                Ruth- I know your gut can't handle the regular stuff. Keep us updated on your tasty experiments though. Burfi sounds interesting. Ugh.. I hate being allergic to nuts!
