  • I have a ton of beef liver in my freezer from a cow my friend raised...will have to figure it out soon...

    • I used a pound of liver so you can alter accordingly

      1 pound of liver
      1/2 c sliced mushrooms
      3 T butter
      4 T celery leave tops
      1/4 c merlot
      2 T garlic
      Salt and pepper

      I baked the liver
      Sautéed in butter the celery, mushrooms and garlic. One all sautéed added the liver and coated.
      Toss it all into food processor with wine, salt and pepper..process until smooth.

      • If you soak/marinade the liver in something could it soften the flavor a bit? Coconut milk, or bone broth, or really anything? Seems like you could also use different wines to get different flavors.

        Love the mantra "weight loss is not linear" I think I should post that just above where I keep my scale!

        • I think using broth will make it more mellow.. I like the rich flavor the merlot gives it though.

          • oh, I think it needs a rich wine, I was just wondering if beef liver is stronger if a sweeter red might help make it more palatable, maybe a zin or a syrah?

                  Yea beef liver might be a tad different. I just use chicken.

                      • Hey, you and I need to figure out our summer visit in CO this summer. DH has a wedding in June (the expensive one in the Dominican Republic), but other than that, I'm looking pretty darned free.

                          I need to think this one out myself. Lily has camp in Texas so it will be pretty pricey getting her there, return home and then back down to pick her up. Since I have also decided to take the admin test ( $500) I need to save for that as well. So, still sorting this out :/
