  • Ok, my cell phone SUCKS for taking pics..... however, here is my first Food Porn to post up. This is what I ended up making for dinner for the family:

    Almond Crusted Mahi Mahi w/ Cucumber, Cilantro, Dill and Lime Sauce with Saute' Spinach and Tomatoes. Shirachi Hot Sauce on side for a kick...... DAMN GOOD TASTIN' TOO! Here is the funny kicker though... I HATE FISH! I like Shrimp and Crab Legs .... BUT DESPISE FISH........ Until now!!!!!

      I'm with you on hating fish (except tuna---go figure!). This does look good though! Can you post how you prepared this, pretty please?!

      • Thanks Just4Me! Sure here is how I made it.... super simple.

        Almond Crusted Mahi Mahi........ I put raw almonds on a plane, ungreased cookie sheet and put them in the oven at 350 degrees for 10 minutes then pulled them out to partially cool. I then ran a few batches of them through a spare coffee mill to medium fine. I then put the ground almonds on a flat plate.

        I then took a full fillet (full side) and cut it into 4 fillets. I scored the skin side to keep from curling when cooking. I sprinkled salt and pepper then dipped the flesh side in egg whites then pressed the flesh side into the almonds and press to coat well.

        In a non-stick skillet add some oil (I used grape seed oil) and put on medium heat. Once hot, add the Mahi Mahi Almond side down for 3 minutes. After 3 minutes CAREFULLY turn over and cook for 3 minutes on the skin side. Finish in a 350 degree oven for 5 minutes.

        In my Magic Bullet blender, I put 1 whole cucumber, a small handful of cilantro, 3 table spoons dry dill, squeeze of lemon juice, tablespoon of grape seed oil, salt and pepper to taste..... blend well. I poured that on the plate and set the mahi mahi on top.

        In a saute' pan.... butter, 1 whole bunch fresh spinach..... saute' until 3/4 done. Turn off heat. Add 1 diced Roma Tomato and add to spinach.... salt and pepper to taste. Serve on same plate as Mahi Mahi.

        Garnish with Parsley and then add design on plate using Shrirachi Hit Sauce.

        That is it! Super Simple!


        That served myself, my wifey and 15 year old son..... comfortably! Woot!

        • That sounds so good! Thanks for the step-by-step, as I'm going to try this. Years ago I had the opportunity (but not the wisdom) to try Mahi Mahi when I went to Hawaii. We went deep sea fishing and the guys filleted it, blotted it with a paper towel and ate some raw....totally grossed me out! LOL

          • Thanks! I don't know what it is.... but the thought and smell of fish turned my stomach. However, as a kid I used to love a local fast food fish place from the 1970's/1980's called H. Salt Fish and Chips. Loved it! In fact the place is still there in Southern California after all this time. However, somewhere down the line fish just didn't work for me.... the taste, definitely the smell.... I was done.

            I tried Tilapia..... yeah, that failed but today when Hunting and Gathering food (at the grocery store), I saw it and it was Wild.... not farm raised and was a white fish. So, I figured why the hell not.

            I am glad I did...... and I know this is going to sound cliche' but..... it really did taste like chicken LOLOL

              One thing I was wondering about. How do you hold your video camera when you're walking and talking?

              • Thanks hiker! Actually, I have been using my cell phone for the videos. I just set it to record and point it at me. Another way I have done videos for things in the past, I have taken a video camera and mounted it on a tripod, keeping it collapsed.... put the folded legs on my hip, hold it with my hand and have the camera pointed back at me. Also that way the LCD screen can be turned and I can see what the camera is filming! LOL

                However, my main way is with my cell phone camera just turned around and pointed at myself!

                • SO Dinner looked amazing-and totally inspiring. I totally won at the food store yesterday and they had buy one get one free pork loins for 9.99!!!!! so I have two HUGE loins of pork in my freezer and NO IDEA what to do... so I am gonna cook one up with some sweet potato fries and broccoli sometime in the next few days--I am so boring!

                            • GGOOOOOODDDDD MORRRRRNNIIIINNNN all my favorite Grokstars! This is your friendly neighborhood TAWFUNGUY who is up and swinging this mornin!! Aaaaaaahhahahahahahahahahhhhhaaaaaaaaaaaaaahahahah ahaha!!!! (Tarzan yell) It is a glorious morning although the heat is starting to creep up and is supposed to hit the high 90 maybe even over 100 today. But no worries!

                              I am prepping for one of my events this weekend in Oregon and the wifey and I will be hitting the road sometime this evening. Now is time to do the prep work and pack the vehicle.

                              I can't express to you all that have posted in support of me over these weeks.... it is truly amazing and I am extremely humbled and thankful to you all and glad we are all in the same tribe!

                              Manda, I have not tried your sweet treat yet but looking forward to hopefully over the weekend though!!!

                              I am having such a great morning! When I get up and I start my day, I am so amped to check out not only my journal but as on many journals as I can. When I see friends on here have great days, celebrating victories big and small, sharing food porn and just genuinely seizing life.... it brings a big smile to my face. When a friend stumbles and has a hard time it is awesome that so many will rush to help them up!

                              Together..... as one Primal Tribe.... WE will make a difference in this world by going against conventional thinking and educate through ACTIONS not just in words the real wonders of this world which are celebrated through healthy living, soaring spirits and a drive that is nothing short of a juggernaut. WE can not be stopped..... no predator, disaster... NOTHING can stop us because the seed has already been planted and our roots run deep and strong.
