Forget Bran Muffins: Give Me Super-Toast

As you all know, I am no big fan of grains, particularly refined grains. But I am a huge fan of fiber, so when I saw the news that scientists are working to develop a strain of wheat that contains triple the fiber of regular wheat, I thought….hey, super toast!

Most Americans get about half their daily fiber intake (and in my view, the daily standards are ridiculously low to begin with). Fiber is the ultimate body cleanser and a cancer-preventer, too. I favor vegetable and legume fiber sources over grains, because excessive consumption of grains comes with many undesirable side effects like inflammation, infection, suppressed immunity, depression and mood swings, diabetes and obesity.

But the grain these scientists want to get on grocery shelves contains high amounts of amylose, a difficult-to-digest (that’s a good thing) “big” starch that the body just passes along without sending into the blood stream. Standard wheat - the kind lurking ubiquitously in every muffin and bagel - contains very little amylose.

Sounds like a pretty inventive compromise. Many Americans aren’t going to forgo bread altogether, so toast on steroids may be a reasonable alternative. Although, I predict sugar will become such a huge issue in 2007, even the medical industry will begin taking a more cautious stance with grains.
