Interesting article. Readers might also be interested in this article (http://www.myfitnesspal.com/blog/diethack/view/red-wine-the-secret-of-the-french-117) I found which suggests that resveratrol (found in red wine) can enhance the health of the heart. Personally, I'm not a huge fan of red wine. However, I might start adding cooking wine to some of my meals for the increasingly numerous health benefits it can provide.

bottoms up! i often add red wine to steaks, it tastes great & stops the steaks from charring, the meat is cooked at a lower temperature (due to the liquid) & also has the benefits as shown in this research. However i recently came across some info from the modern foragers site about oak aged wine containing fire retardent chemicals, does anyone have any info on this?

I am a big fan of red wine so this will not be a problem for me. I do like to have a glass of red wine with my steak for instance, and I sometimes but certainly not all the time, enjoy a glass of pinot with my fish.

No.

"Even better, the meal with wine concentrate added prior to heating “completely prevented” any elevation in plasma levels of the compound!"

Marinade (reds...whites don't have the same antioxidant cpacity) and then have a glass with your meal if you are so inclined.

I recently started to add cooking wine to all my favorite recipes (I'm not an alcoholic, I swear!). Do I understand the article correctly that I've got to add the wine after the meat's cooked for this to work?
