Instead of cutting the stems, I prefer to grab the cut end of the stalk between my index finger and thumb and snap it off. The tough part of the stalk always comes off leaving only the tender part.

In related news, a caddy found a golf ball at the end of the fairway that he claimed belonged to Tiger Woods because it had a picture of his mistress on it. When questioned about it, Tiger looked at the ball with the picture and replied, “Yeah, I hit that.”

I would have zested the lemon first and put the lemon zest in the reduction sauce or on the sole itself.
